ALL ON THE SAME DAY. The pods are harvested. We open the pods and pre-select the best beans, place these beans in sealed containers and transport them by burros and motorcycles to our processing facility. Upon arrival, we conduct a second pre-selection process. During this process, we remove damaged, discolored and unripe beans and extract melted pulp juice. Next, we thoroughly mix the beans by hand to add additional oxygen, which enhances the fermenting process. It also evens the temperature of all the beans. Then the beans are placed in the fermenting boxes, all on the same day.
